Spinach, Shiitake, and Feta Casserole

Ingredients
3 Shallots (sliced)
OR 1 medium sized onion (diced)
6 ounces Shiitake mushrooms (sliced)
6 ounces Portobello or white mushrooms (sliced)
2 tablespoons Butter
32 ounces Spinach
6 ounces Feta cheese
3 tablespoons Creamy Caesar dressing
4 Eggs
3 tablespoons seasoned almond flour
1 teaspoon Sea salt

Step by Step Instructions
  1. Preheat oven to 375 degrees. Squeeze excess liquid from the spinach with a cheesecloth
  2. Saute the diced onion in butter, add the mushrooms and continue to saute. Remove the onions & mushrooms and saute the spinach.
  3. Whisk the eggs, dressing, salt, and cheese together in a bowl. Put the vegetables into a bowl and pour the mixture over them. Gently toss to combine.
  4. Put the mixture into a eight-inch square casserole dish. Sprinkle the top with the seasoned almond flour and bake for 1 hour.
