Spiced Feijoa Chutney

Serves: 2 cups
Vegan!

Ingredients
13 Feijoas (flesh scooped out)
2 medium sized Apples (peeled and chopped)
1/5 cup Raisins or sultanas
1 medium sized Red onion (diced)
OR 2 shallots (diced)
1 cup Apple Cider Vinegar, or Red Wine/Malt Vinegar
7/8 cup Powdered jaggery or coconut/brown sugar
1 teaspoon Coarse sea salt
1 tablespoon Ginger root (peeled and grated)
2 cloves Garlic (minced)
1/2 of a Chili pepper (preferably red) (de-seeded and sliced fine)
1 whole Star anise
Zest from 1 lemon
Bread slices (for serving)
And/or crackers (for serving)

Step by Step Instructions
  1. Put the garlic, chili pepper, and ginger into a large pot and fry for 1 or 2 minutes. Add all of the other ingredients to the pot, cover the pot, and bring the mixture to a boil.
  2. Remove the lid and let the mixture simmer over low heat for 1 hour, stirring occasionally particularly towards the end of cooking.
  3. Once the liquid has been cooked off, mash the chutney and remove the pot from the heat. Spoon the chutney into a sterile jar while it is still warm, then cap the jar. Let the chutney rest in the jar for a few weeks before opening, and refrigerate once the jar has been opened.
