Feijoa Ice Cream

Ingredients
2 pounds Feijoas (flesh scooped out)
2 medium sized Bananas (peeled & chopped)
1/2 cup Cream
OR yogurt
1 Feijoa (stem removed)
20 Fresh mint leaves

Step by Step Instructions
  1. Line a baking tray with parchment paper and place the scooped-out feijoas and the chopped banana in a single-layer. Cover the tray with cling wrap and let sit in the freezer for 8 hours.
  2. Put the frozen feijoas and bananas into a large food processor (if fruit is too frozen let thaw for 5 minutes).
  3. Chop up the whole feijoa and add it to the food processor along with the cream/yogurt, and mint leaves. Blend until smooth (stop and scrape down the sides of the food processor periodically. If necessary, add more cream/yogurt to ensure the mixture has the consistency of ice cream.
  4. Scoop into bowls or cones, then serve.
