Basil Berry Peach Cobbler

Step by Step Instructions
- Preheat oven to 350 degrees. Put all of the ingredients in the "filling" section into a quart-sized baking dish. Toss to ensure a thorough coating. Spread evenly across the bottom of the dish and set aside.
- Make the topping: put the oat flour, rice flour, arrowroot flour, salt, baking powder, psyllium (or xanthan gum), and coconut sugar in a bowl, then whisk to combine. Mix in the basil. Cut in the solid coconut oil. Add some of the cold "milk" and mix with a spatula (add more milk if the mix is too dry).
- Gently spread the topping batter in an even layer over the fruit. Brush a bit of "milk" over the topping. Bake for 20 to 25 minutes.
- Serve warm with vegan ice cream or vegan yogurt.
