Daikon Radish Fries

Ingredients
1 large Daikon radish
2 tablespoons Coconut oil (softened)
1/2 teaspoon Salt
1 teaspoon Fresh thyme leaves (divided)
Sauce for dipping (optional)
or ketchup
or mustard

Step by Step Instructions
  1. Preheat your oven to 400 degrees. Using a sharp knife, cut the radish into fries (1/2 inch thick and 3 inches long). Soak the fries in a bowl of water for 20 to 30 minutes, then discard the water and pat the fries dry.
  2. Place the fries into a bowl with the coconut oil, salt, and 1/2 teaspoon of thyme leaves. Toss the fries in the mixture until they are coated.
  3. Lay the fries on a baking sheet in a single layer. Bake for 50 minutes, flipping the fries over half way through (after 25 minutes).
  4. Remove the fries from the oven, sprinkle them with the remaining thyme leaves, and serve with dipping options if desired.
