Vegan Yellow Squash Soup

Vegan!

Ingredients
2 pounds Yellow squash (thinly sliced)
1 cup Vegetable broth
3/4 cup Onion (chopped)
1 tablespoon Oil
1 tablespoon Lemon juice
1/8 cup Nutritional yeast
2 tablespoons Fresh parsley (for garnish)
Salt & pepper to taste

Step by Step Instructions
  1. Add the oil to a large saute pan and add the onion and sliced yellow squash. Saute until tender.
  2. Add the vegetables to a blender along with the broth, lemon juice, and nutritional yeast. Puree until smooth, then season with salt & pepper to taste.
  3. Serve warm with fresh parsley for garnish.
