Feta & Chive Muffins

Serves: 1 dozen


Ingredients
1 1/2 cups All-purpose flour
3 teaspoons Baking powder
1/4 teaspoon Salt
2 Eggs (room temperature)
1 cup Milk
2 tablespoons Butter (melted)
1/2 cup Feta cheese (crumbled)
3 tablespoons Chives (minced)

Step by Step Instructions
  1. Combine the flour, baking powder and salt in a large bowl and set the mixture aside.
  2. Combine the eggs, milk and butter in a separate bowl, then stir this mixture into the flour mixture. Fold in the feta and chives.
  3. Fill 12 greased or paper lined muffin cups 2/3 full. Bake at 400 degrees for 18 to 22 minutes.
  4. Cool for 5 minutes, and serve while still warm!
