Ingredients
2 pounds Shrimp (raw)
2 tablespoons Olive oil
1 teaspoon Salt (divided)
3/4 teaspoon Black pepper (divided)
1 Watermelon radish (thinly sliced)
1 French Breakfast radish (thinly sliced)
4 Green onions (sliced)
1/2 cup Diced fennel bulb
1/4 cup Orange juice
1 teaspoon Honey
2 tablespoons Mayonnaise
1/4 cup Mint (plus extra for garnish)

Step by Step Instructions
  1. Peel and devein shrimp, then pat them dry. Saute them at a medium-high setting for about 4 minutes.
  2. Combine shrimp, olive oil, 1/2 teaspoon salt, 1/2 teaspoon, the radish slices, green onion slices, and fennel in a large bowl. Set aside.
  3. Whisk together orange juice, honey, mayonnaise, mint, and the remaining salt and pepper. Poor this combination over the shrimp mixture and toss. Serve chilled with extra mint for garnish.
