Cornbread Squash Casserole

Serves: 8 servings


Ingredients
3 cups cooked, mashed yellow squash
1 medium onion, chopped
1 bell pepper, chopped
5 Tbsp butter
2 Tbsp sugar
1 tsp salt
1/2 tsp black pepper
2 cups crumbled cornbread
3 eggs
2 cups shredded cheddar cheese, divided

Step by Step Instructions
  1. Saute onion and pepper in butter until soft. In a large bowl, mix squash, sugar, salt, pepper, cornbread, milk, eggs, and 1 cup of cheese. Add onion mixture and stir to mix well. Pour into a greased 2-qt. baking dish. Bake at 375 degrees for 35 minutes. Sprinkle remaining cheese on top and bake an additional 10 minutes.
