Gingery Butternut Squash Soup

<p>If you are running out of squash recipes and tired of it plain, this is a good one to try. The fresh ginger gives it a bright flavor.<br /> This recipe can be vegan if the broth used is vegetable.</p>

Ingredients
2 onions, chopped
2 TBS chopped, peeled ginger root
1 TBS cooking oil
2 apples, peeled, cored & chopped
1 Butternut squash, peeled & cut into cubes
4 Cups chicken or vegetable broth

Step by Step Instructions
  1. Saute onion & ginger in oil until onions are translucent.
  2. Add remaining ingredients and simmer until the squash is tender.
  3. Puree in blender until smooth. Salt & pepper to taste. Can be served with chopped fresh parsley sprinkled on the top.
